
Grapefruit Cranberries Cheesecake

Good morning! Some embarassing story and a food post.
4 years ago, two of my ‘very interested in cooking and really pretty good at cooking’ friends
taught me this simple and quick homemade cheesecake.
However, I’m sucks at cooking and i embarassed myself at my own farewell party bringing a failed cake 😂.
So… erm… Let’s try again.

Recipe from Philadelphia:-
Ingredients i use:-
- Philadelphia cream cheese (250 g = 1 block)
- *This is where everything starts to go wrong 4 years ago, i assumed 1 block = 500 g 😅
- Butter (35 g)
- Oreo (1 pack)
- Cooking cream (170 mL)
- Dried Cranberries (at will)
- Grapefruit (at will)
- Gelatine (1½ teaspoons, in approx. 45 mL boiling water)
- Sugar (100 g)
- *it turns out the cheesecake is already sweet enough thus not suggested to use 180 g as suggested in the recipe
What i’ve done:-
- Open up the Oreo cookies and throw away the sandwiched cream (it’s a waste, suggested to use digestive biscuits)
- Combined cookies crumbs and butter and press into the base of a springform pan & silicon mould. Chill.
- Beat Philadelphia cream cheese and sugar with whisk (just because i don’t have a mixer or even a blender 😅) until smooth.
- Add in gelatine mixture and mix.
- Add in cooking cream and some grapefruit juice; beat until smooth.
- Add in some dried cranberries and grapefruit.
- Pour mixtures into the prepared base and chill for 3 hours.

At least now it’s a proper cheesecake and it taste pretty good except that the grapefruit caused some bitterness (you may not want to use grapefruit 😬)
More to improve but i’m pretty happy with what i got now. Yeay!
